Meal Plan January 2, 2022

In case you need some inspiration, here's what we are eating this week! 

Sunday - Chicken, orzo, and roasted veggies (zucchini/peppers/tomatoes)- inspired by a Blue Apron meal we had years ago! I don't order the boxes, but I have saved all the recipe cards to make on my own every once in awhile. 

Monday - Figgy balsamic pork loin, green beans, and potatoes - The figgy balsamic pork loin is also a favorite Blue Apron dish we love to recreate at home. I just made it on NYE and omg, it was so good. I bought 2 pork loins so I am going to make it again. The green beans are frozen from our garden (I found them when I cleaned out the freezer the other day!), and roasted potatoes left over from buying a Costco sized bag for potato soup last week. 

Tuesday - one pot chicken and sun-dried tomato pasta from HBH blog. She posted about this on her stories, and I think I was actually drooling watching her. I can't wait to try it. 

Wednesday- Keeping it simple with chicken thighs and smashed peas. So delicious when you use What's Gaby Cooking spices! 

Thursday - coconut shrimp with chickpeas and basil from the cookbook of the month - Cook this Book by Molly Baz! I cant wait to try this dish. It will be my first one from this cookbook. 

Friday - leftovers 

Saturday - Pizza - homemade is our favorite and our go-to toppings are pesto, mozzerella, kale, goat cheese, and sun-dried tomatoes. Way better than any pizza we could order.
