Homemade Enchiladas with Homemade sauce

Before finding this recipe a few years ago, I would buy store-bought enchilada sauce. I never liked it because it was always too spicy and would ruin dinner for me! It kept me from enjoying one of my husbands favorite dishes - Alex could eat mexican food for every meal. I’m so glad I found this recipe, and I love how I can customize this to just the right amount of spice! Super quick and easy. We love it and hope you do, too! 

Ingredients for Sauce:

  • 2 tablespoons avocado oil (or other neutral vegetable oil)

  • 2 tablespoons flour

  • 2 to 3 tablespoons chili powder (depends on how spicy you like your sauce!)

  • 1/2 teaspoon garlic powder 

  • 1/2 teaspoon salt

  • 1/4 teaspoon ground cumin 

  • 1/4 teaspoon dried oregano

  • 2 cups chicken broth

Ingredients for Enchiladas

  • 1- 1.5 lbs pound ground beef (I like to use grass-fed)

  • 8 Flour Tortillas

  • 3 cups of Shredded Cheese

  • Salt and pepper

  • 1 small white onion, peeled and diced

  • 1 4oz can diced green chiles

  • 1 15oz can black beans (optional)  

  • Cilantro for topping (optional)  

      

 Instructions for Sauce:

  • Heat oil in a sauce pan, add flour and whisk together

  • Add in chicken stock, whisking to remove lumps

  • Stir in seasonings

  • Bring to boil

  • Reduce heat and simmer for 15 minutes until thickened!

Instructions for Enchiladas:

  • Preheat oven to 350 degrees F

  • Brown your beef (add salt and pepper during this time), breaking into small pieces

  • Drain grease if necessary, set aside

  • Cook chopped onion until translucent.  

  • Add to the onion mixture green Chiles and beans (if using)  

  • Cook for 2 minutes and stir occasionally. 

  • Remove pan from heat, add in meat, and 1/4 cup of the enchilada sauce! 

Instructions to assemble enchiladas:

  • Spoon 1-2 teaspoons of sauce on a flour tortilla

  • Add a layer of the beef mixture and a layer of shredded cheese of choice (I like the Mexican blend)

  • Roll it up and place in glass baking dish

  • You should be able to fit 6-8 in a baking dish depending on how full you stuff them

  • There should be enough sauce to put inside the tortilla and to cover the top

  • After adding sauce to the top, add cheese, and bake in the oven for 15-20 minutes or until cheese is melted.
