Healthy Apple Muffins

These are the very best apple muffins ever. I hope you enjoy! 

Ingredients:

  • 1 3/4 cups flour (I used regular AP)

  • 1 1/2 teaspoons baking powder

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup grated apple (skin off)

  • 1 cup diced apple (skin off)

  • 1/3 cup melted coconut oil

  • 1/2 cup maple syrup

  • 2 room temperature eggs

  • 1/2 cup plain greek yogurt

  • 1/2 cup applesauce

  • 1 teaspoon vanilla extract

  • 1/4 cup Quick cooking oats 
  • cinnamon and sugar mix for topping

Instructions

  • Preheat oven to 425 degrees F

  • Place muffin cups in your pan (this recipe makes between 12-16 muffins)

  • In a large mixing bowl, combine flour, baking powder, cinnamon, baking soda and salt.

  • Blend with a whisk

  • Add in grated apple and chopped apple

  • Stir with a spoon to combine

  • In a medium bowl, combine coconut oil and maple syrup and beat together with a whisk

  • Add the eggs and beat well

  • Add the yogurt, applesauce, and vanilla and mix well

  • Pour wet ingredients into dry and mix with a spoon until combined

  • The batter will be fairly thick. Add the oatmeal and give it a few more stirs

  • Divide into your muffin pan cups and sprinkle the tops with cinnamon and sugar topping 

  • Bake ~ 13 minutes
